Recipe

Ingredients:

1 cup shredded purple cabbage

1 whole medium candy beetroot (or normal), grated

1 pink lady apple, grated

1 small bulb of fennel, finely sliced

1 handful fennel fronds, chopped

2 big handfuls baby kale leaves, chopped

1 spring onion, finely sliced

1 small (not too spicey) red chilli, finely diced

2 fronds of dill, chopped

1/4 cup of finely chopped garlic chives

1 handful of parsley, finely chopped

1 handful of mint leaves, finely chopped

1/4 cup of dried currents

Dressing:

Juice of 1/2 an orange

Juice of two limes

S + P to taste

Method:

Prepare then combine all ingredients in a bowl. Squeeze citrus juices straight in and mix well, until everything is nicely coated. Set aside until juice soaks in and softens things up a little, 5-10 minutes. The dressing will end up at the bottom full of all the herby goodness!! Toss again before serving and add a crack of S + P. Then enjoy this super tasty, crunchy, fresh, tangy, sweet delicious salad. So good on its own but pairs very well with meat, fish etc. No fat so cuts through deliciously.

My favourite Raw Recipe so far!! Will be making this a whole lot from now on!!!
