Recipe

Ingredients:

4 raw nori wraps

1 avocado, sliced

2 small carrots, sliced

1/2 cucumber, cut into sticks

1/3 kohlrabi, cut into sticks

1/4 red capsicum, sliced

8 snow/ sugar snap peas, sliced

4 handfuls of mixed leaves

Small bunch of coriander, leaves removed

1 spring onion green, sliced

10 chives, cut into batons

Juice of 1 lime, for avocado

4 button mushrooms, sliced

2tbsp currants

Method:

Lay out 1 nori paper, first lay mixed greens on half the paper, leaving a small space in front to roll over. Arrange rest of the ingredients on top of lettuce and then wrap the nori roll by folding side closest to you over and tucking underneath.

Firmly press along the roll to Tighten the wrap around the filling, tucking further under as necessary.

Roll over until there is about 2cm lip left then wet with water, using finger, enough so that it changes consistency and goes a bit gooey and roll up.

Press down to make sure it’s secure.

Repeat for rest of the nori rolls.

Et voila. Eat!!

Also sprouts!! Sprouts would have been good, I should have put sprouts in!!
