Recipe

Ingredients:

1 cup fresh shiitake mushrooms (Or whichever mushies you can get your hands on), finely sliced

Juice of 1.5 limes

Juice of 1/4 orange

1 clove of garlic, finely grated

1cm knob of ginger, finely grated

1 spring onion top, finely chopped

1 tbsp coriander (leaf and stem), finely chopped

5 garlic chives, finely chopped

1 1/2tsp Manuka honey or maple syrup

S+P to serve

Method:

Combine marinating ingredients in a bowl and set aside while slicing mushroom.

Stir through mushrooms, cover and refrigerate for 2-3 hours so all the flavours can combine and penetrate the mushies. Feel free to stir them a couple of times while refrigerating.

Take out of the fridge before serving and add a crack of S + P and oh my they are so delicious. Chilli would be a good addition if you like some spice too!! So good in a Buddha bowl, on lettuce wraps I might even try making a raw san choy boa with them!!

This marinate is kind of like a quick pickling liquid and could be used for anything you like, I threw some slice cucumber in to see how it would go. Delicious!!
