Recipe

Ingredients:

1 just ripe peach, julienned

1 beetroot, grated

1 carrot, grated

1 cup shredded cabbage

1 bulb of baby fennel or equivalent, finely sliced

1/4 red capsicum, finely sliced

1 small spring onion, finely sliced

1 small handful of green beans, finely sliced (I used one very long snake bean)

4 gai choy leaves or other Asian green, finely sliced

1 handful of coriander leaves

1 handful of mint leaves, finely sliced

1 tips coriander seeds, crushed

Juice of 1 orange

Juice of 1 lime

Method:

Prepare ingredients and combine all ingredients in a bowl, toss and serve. Toss and serve!! The tanginess of the just right peach with the herbs is delicious!!
