Recipe

Ingredients:

1 cup watermelon (fresh or frozen)

1/2 cup honeydew melon (fresh or frozen)

1 cup cucumber (fresh or frozen)

1 big handful Thai basil leaves

1 big handful baby spinach leaves

1 handful strawberries (fresh or frozen)

Juice of 1 lime

1/2 cup coconut water (only need if using frozen melon)

Method:

Add melon (I used frozen in both cases for this recipe), cucumber (I used fresh), Thai basil, spinach, lime and coconut water to blender. Blend until combined. Add strawberries (I used fresh alpine strawbs in mine this time) and blend for an extra 10 seconds. That’s it!! Slushy, refreshing, sweet, melony, green goodness!! The Thai basil really makes this recipe and is so easy to grow yourself! If you’re a super sweet tooth add 1/4 teaspoon of honey but I prefer mine without.

The trick is using a combination of fresh and frozen ingredients so that you get the nice slushy texture. I have some frozen melon left over from last years crop. When my fresh ones are happening I might switch it up and use fresh melon with frozen cucumber and strawberries instead. I would skip the coconut water if using fresh melon as it’s so juicy on its own!!
