Recipe

Ingredients:

1 mango, finely diced

1/2 cucumber, deseeded and finely diced

4 baby corn cobs, finely diced

1 cheek of a red capsicum, finely diced

2 yard long bean (or small handful of green beans), finely sliced

1/8 red onion, finely diced

2 small red chillies, finely sliced

Small handful of coriander leaves, finely sliced

Two sprigs of mint leaves, finely sliced

Juice of 1 lime

S + P to taste

Lettuce or greens for serving (wraps)

Method:

Prepare salsa ingredients and place into a bowl. Stir until ingredients are evenly dispersed.

Wash and dry your choice of greens, I used fresh kale, chard and some Asian greens, lettuce would be great too and serve with salsa on the side.

I can not wait to try this recipe with some blackened fish or BBQ chicken. But it is very yummy on its own.
