1 medium zucchini, spiralized

1 handful of basil leaves, torn

1 handful of rocket leaves, torn

1 tomato, roughly chopped

1tsp garlic chives


1 small mango, peeled and roughly chopped

1 handful of sunflower sprouts

1/8 of a red onion

1 clove of garlic

Leftover zucchini from spiralizer

Juice and rind of 1/2 lemon

Spiralize zucchini and place into a colander, add a pinch of salt to draw out excess moisture and set aside. If you don’t have a spiralizer, finely julienned works the same.

Prepare and place ingredients for mango sauce into a small food processor and blitz until smooth.

Prepare rest of zoodle ingredients. Pat psiralized zucchini down with paper towel.

Add chopped tomato, torn herbs and mango sauce and stir through.

Top with S + P as desired, chopped garlic chives and a squeeze of lemon juice.
