1 cup button mushrooms, quartered
1/2 cup sun dried tomatoes
1/4 cup red onion
1/2 cup of water
1 tbsp chopped oregano (fresh or dried)
1 tbsp garlic chives

Start of by soaking sun dried tomatoes in water for 15-20 minutes to soften them up.
Drain but keep excess water in case you want to add a little while processing.
Place ingredients into food processor and blitz until combined and onion is chopped finely. Add tomato water to get the consistency you are after, thicker for pasta type sauce, thinner for a dressing.
I used it as a chunky salad dressing but would be amazing on zoodles or as a dip for veggie sticks. Yum!!
