Recipe

Ingredients:

“Pasta”:

2 Lebanese cucumbers, deseeded and julienned or spiralized

1/8 of a red onion, finely sliced

1/2 a tomato, medium diced

Sauce:

1 small zucchini, roughly chopped

1/2 a tomato, roughly chopped

1/8 of a red onion

2 cloves of garlic

1 big handful of basil leaves

1 small red chilli

Juice of 1/4 lemon

1tsp honey (or maple syrup/date for full on vegan)

To top:

Chopped fresh oregano

S + P

Method:

Add pasta ingredients to a large bowl and toss until onion and tomato is spaced through evenly.

Put sauce ingredients into small food processor and combine until smooth.

Add sauce to ‘spaghetti’ and toss through with a pair of tongs, making sure cucumber is all coated.

Place into a dish to serve, leaving excess juice in the bottom and top with oregano, S + P.

Could add whatever veg you like to this, I reckon mango would also be delicious. I’m going to try that soon!
