1 orange, segmented

1 pink grapefruit, segmented

1 baby fennel bulb, finely sliced

1 handful of green beans, sliced

1 handful of snow peas, sliced

1/4 cup of fresh peas

1 handful of mixed greens, I used; rocket, spinach and lettuce leaves

1 spring of dill

1 handful pastel leaves, chopped

Pepper to taste

Radish sprouts as a garnish


First segment oranges, by cutting off either end and then taking off the peak and cutting on either side of the pith line, set aside remains to squeeze as dressing.

Place into a bowl with the rest of the ingredients, squeeze over remaining citrus juice. Stir through to dress. Top with raffish sprouts and add a crack of pepper or two of pepper as you please.

Super fresh, clean, no salt necessary. Delicious!!
