Recipe

Ingredients:

Slaw Dressing:

1/2 avocado

1cm knob of ginger

1/2 cup water

Juice of 1 lime

1 tbsp chopped spring onion

1 tbsp coriander

Salad:

1 cup shredded cabbage

1/2 carrot, julienned

1 cup Asian greens, shredded

1/4 red capsicum, finely sliced

1/2 spring onion, finely sliced

1/2 cup bean shoots

1 small bunch coriander leaves

1 spring of mint leaves, shredded

1/4 cup sliced sugar snap peas

Method:

Prepare all ingredients for the slaw and place in a bowl, mix until evenly dispersed.

Place dressing ingredients into small food processor and blitz until smooth.

Add dressing to slaw and stir through. Slow to sit for 5 mins so the dressing penetrates the veg.
