Ingredients:
Smoothie:
1 unsweetened açai pouch
1/2 medium frozen banana
Handful of frozen strawberries
Handful of baby spinach leaves
1/2 cup unsweetened almond milk
Bottom and top!
1 cup granola (3/4 underneath, 1/4 on top)
1 dessert spoon of salted PB
1/2 medium fresh banana
1 Tablespoon of chia seeds
6 inca berries
1/2 cup chopped fresh strawberries
Method:
Blend smoothie ingredients together. I find a normal blender works better than the ones you make in the cup (ninja etc) and add more almond milk to get your perfect consistency. I chuck my blender in the freezer while I prep the top!
Put 3/4 of the granola into a bowl. Add the peanut butter and mix all up (so the PB is evenly spread through, making a sticky tacky delicious crunch!!)
Slice the banana and strawbs (however you damn well want) and chop the inca berries.
Pour over the smoothie, use a spatula so you don’t waste any yummy bits. Then top off with fresh fruit, chia, incas and remaining granola..
I can’t handle too much fruit or sugar so this is the perfect balance for me.. The smoothie’s not too sweet, the fresh nana and berries make up for that. A bit of tang from the incas and the right amount of savoury and crunch. I use my own granola; Whole Bowl GF!! Which I’m in the development stages of creating, am hoping to make it available later this year!! Will keep you posted!!
